This is one of my favorite cold weather recipes! Thanks to my mom for this recipe which I started making in college!
Breaded Chicken
- chicken breasts or tenders – pounded thin
- flour in a small bowl for dredging
- eggs, beaten, in a bowl for dredging
- bread crumbs for dredging
- vegetable oil
- butter
Place a large saucepan on the cooktop. Turn to medium. Add oil and butter, equal parts (I use about 2 tablespoons oil and same part butter). For each tender or breast, dredge in flour, then egg, then bread crumbs. Once the pan is hot, add the chicken. Salt and pepper the chicken. Turn when the bottom gets golden brown. Salt and pepper the second side. When you take it out of the pan, pat it dry. Keep in a 200 degree oven if you are making a large batch. Serve with lemon wedges.
If you make a second batch in the same pan, wipe the pan out and start the process over with fresh oil and butter.
This goes nicely with Fettuccine Alfredo. A lighter option is egg noodles tossed with smart balance and Parmesan cheese.
This chicken is wonderful heated the next day. It also makes a great cold sandwich!
