Mexican Wedding Cookies

  • 1 cup butter – soft
  • 1/2 cup confectionery sugar
  • 2 1/4 cup flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 3/4 cup chopped walnuts

Cream butter. Add sugar. Slowly add flour and salt. Blend vanilla. Add nuts.Wedding Cookies

Chill dough for one hour.

Form dough into balls. Place on cookie sheet two inches apart. Bake at 400 degrees for 8 to 16 minutes (depending on how large the balls are). They are done when the bottoms are a golden brown (the top remains white).

While warm (maybe after they’ve been cooling about twenty minutes) roll in extra confectionery sugar.

I make these for Christmas. Thanks to my mom for the handed down recipe!
