Place one or two pork tenderloins (most grocery stores sell these BOGO every 6 weeks or so) along with 1/2 cup of your favorite BBQ sauce in a crock pot on low setting for the day, turning every few hours. When you are ready to eat, pull apart using to forks, then mix in more BBQ sauce. Serve with extra sauce if you like. (Thanks to my neighbor Kelley for the recipe)
A note about BBQ sauce. If you haven’t tried Bone Suckin’ Sauce, try it! In N.C. you can purchase it at The Fresh Market as well as Harris Teeter.
Sides : Corn, coleslaw, baked beans.
Here’s a great dressing recipe for the coleslaw:
Combine:
1 cup mayo
2 tbsp vinegar
2 tbsp sugar
1/4 tsp dry mustard
1/4 tsp seasoning mix (equal parts salt, pepper, garlic powder)
together with a whisk in a bowl.
Pour a small amount over coleslaw and mix. Add until coleslaw is damp. Refrigerate for at least 4 hours before testing. Add more dressing if needed before serving.
