Hash Brown Casserole

  • 6 large eggs, well beaten
  • 1 can evaporated milk
  • 1  1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 package shredded hash brown potatoes
  • 3 cups (12 ounces) shredded cheddar cheese
  • 1/2 medium onion, chopped
  • 1 small red or green pepper
  • 1 cup diced ham or sausage or bacon pieces

Preheat over to 350 degrees. Grease 13X9 baking dish.

Combine egg product, milk, salt and pepper into a large bowl. Add potatoes, cheese, onion, pepper and meat. Mix well. Pout mixture into baking dish.

Bake for 60 to 65 minutes or until set.

NOTE : You can use cholesterol-free egg product. You can use turkey bacon or no meat. My dad, Poppy, would like twice the amount of meat if he made it. Don’t forget, those shredded has brown potatoes go on sale about every 6 weeks – buy one get one free. They freeze well, so stock up!

ALSO, this recipe halves well, just use a square glass dish to bake. It refrigerates well and microwaves well (but you want to eat it within a few days). I prep the items the evening before and Rich assembles it and bakes it for us – a great company dish for breakfast with a little fruit on the side.

  1. Yum! We have a recipe that my daughter insists on periodically that includes sour cream and cream of chicken soup. And there are no eggs. In fact, I gave the recipe to my sister, who doctors it, and of course now she makes it best!

    Anyway, this sounds good. I’ll send it to my sissy. Or maybe I should hog the glory for myself . . .
